What You’ll Need

  • 1 1/2 cups of sugar
  • 1/2 cup of unsalted butter
  • 1 cup of self-raising flour
  • 1 cup of milk
  • 2 cups of fresh boysenberries
  • 1/4 cup of sugar for topping
  • 1 teaspoon of vanilla extract

Method

Step One

Preheat your oven to 350 degrees Fahrenheit. While the oven is heating, grab a 9×13 baking dish, and melt the butter in it.

Step Two

In a separate bowl, mix together the self-raising flour and 1 1/2 cups of sugar. Gradually add in the milk to this mixture, stirring constantly to prevent any lumps from forming. Add the vanilla extract to this mixture and stir until it is fully incorporated.

Step Three

Pour the flour and sugar mixture directly over the melted butter in your baking dish, but do not stir them together.

Step Four

Evenly distribute the fresh boysenberries over the top of the flour and sugar mixture. Again, do not stir. Then sprinkle the remaining 1/4 cup of sugar over the top of the boysenberries.

Step Five

Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the cobbler is set. Allow to cool for several minutes, then serve warm with your choice of ice cream or whipped cream.
