Why I Love Czech Bramborová omáčka

For years, I’ve enjoyed exploring world cuisines and incorporating new and diverse recipes into my repertoire. This time, I’ve unearthed a traditional and delectable Czech masterpiece, Brahborová omáčka. There’s something beautifully comforting about this potato sauce which is both hearty and savory. I must admit, although my culinary heart lives and breathes New England seafood, the rich and homely appeal of this Czech recipe has captivated me.

The Inspiration Behind Bramborová omáčka

This love affair began a few years ago when I came across a cookbook by renowned chef Klara Zubonja. Known for her divine Czech recipes with a modern twist, Klara has truly mastered the art of embracing simplicity while delivering intense flavors. This recipe for Bramborová omáčka, a delightful, creamy potato sauce, is a perfect example. It’s simple enough for a weeknight supper yet sophisticated enough to serve to guests. And what I find so inspiring at the heart of Czech cooking, is the ability to turn humble ingredients into a dish of utter magnificence.

Flavors Weaved into Bramborová omáčka

One might say that the heart of Bramborová omáčka lies in its earthy blend of potatoes, buttery onions, aromatic marjoram, and nutty caraway seeds. However, the crowning glory is surely the generous pour of velvety cream that elevates the sauce to supreme indulgence. Don’t be fooled – beneath the humble exterior lies a symphony of flavor and texture.

If you’ve ever savoured and relished Potato Leek Soup, you’ll find similar comforting, homely notes in Bramborová omáčka. It’s also worth mentioning that the dish blends beautifully with a side of roasted vegetables or a simple green salad for added crunch and color. Trust me, once you try it, you’ll serve this Czech delicacy more often than you think.

From my kitchen in Portland to yours wherever you are, I hope you find the same joy in this delightful, hearty and yet charmingly simple recipe of Bramborová omáčka. My daughters Erin and Samantha are especially fond of it, coming back for seconds every time. Life may not be perfect, but your meal can be!

What You’ll Need

  • 1 cup of diced onions
  • 1 tablespoon of butter
  • 1/3 cup of flour
  • 5 cups of vegetable broth
  • 2 pounds of potatoes, peeled and diced
  • 1.5 cups of heavy cream
  • 1 tablespoon of dried marjoram
  • 1 tablespoon of caraway seeds
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 6 fresh bread rolls
ALLERGENS: Milk, Gluten, Wheat

Method

Step One

Start by melting the butter in a large pot over medium heat. Once melted, add the diced onions to the pot. Sauté until the onions turn slightly golden in color.

Step Two

Next, stir in the minced garlic and continue to sauté until the garlic is fragrant. Then, sprinkle the flour over the onions and garlic. Stir until the flour is evenly distributed and the mixture thickens slightly.

Step Three

Slowly add the vegetable broth to the pot while continually stirring to avoid any lump formation. Bring the mixture to a simmer.

Step Four

Add the diced potatoes into broth along with the dried marjoram and caraway seeds. Simmer this mixture until the potatoes are tender.

Step Five

Pour the heavy cream into the pot. Stir to combine everything well. Continue to simmer the soup until it thickens to your liking.

Step Six

Season the soup with salt and pepper according to your taste. Let it cook for another minute or two for the flavors to merge together.

Step Seven

Serve the Bramborová omáčka hot with fresh bread rolls on the side. Enjoy this comforting and flavorful Czech dish!
