Just like the sauce that lends it its name, this (image) Brown Mustard Spiced Roast Beef recipe is simple yet diverse, pairing well with many dishes and catering to all tastes. Given its easy-to-find ingredients and delightful taste, it’s a perfect sample of the ethos behind my cooking – comforting, crowd-pleasing, and not too complicated.

A Recipe for Health and Heartiness

Wherever it’s served, this recipe is a conversation piece, not just for its delicious blend of flavors, but also for its surprising health benefits. The juicy, nutrient-rich beef at its core is a source of high-quality protein and essential vitamins like B12. Meanwhile, the brown mustard coating is packed with omega-3 fatty acids, full of anti-inflammatory potential.

And that’s not to mention the generous helpings of onions and carrots. These veggies add texture and are known for being good sources of fiber, vitamin C, and beneficial antioxidants. They, together with heart-healthy olive oil and a good dose of herbs, make this recipe a palette of nutrients that is sure to impress the health-conscious gourmet.

In the Context of Cuisine

The Brown Mustard Spiced Roast Beef recipe has striking similarities to the traditional Irish beef stew, yet it adds a unique twist with the robust flavor of brown mustard. Serving this alongside a vibrant green salad or with some hearty mashed potatoes would complement the flavor balance beautifully. Naturally, a hearty slice of traditional Irish soda bread wouldn’t go amiss, carrying on the cultural heritage of my ancestors that I love to weave into my cooking.

And of course, no roast beef would be complete without a fabulous pairing wine. I like to break out a bottle of Cabernet Franc or a Malbec to stand up to the rich flavors of the dish. Fun fact, this is something I often enjoy with my better half, Laura, while we try to navigate the blissful chaos of parenting our baby boy.

From my family to yours, I hope this Brown Mustard Spiced Roast Beef recipe brings a touch of delicious warmth to your table, just as it does mine.

What You’ll Need

  • 3 pound beef roast
  • 1/2 cup of Brown Mustard
  • Salt and Black Pepper to taste
  • 1 tablespoon of olive oil
  • 1/4 cup of brown sugar
  • 3 cloves of garlic, minced
  • 1 tablespoon of thyme
  • 1 tablespoon of rosemary
  • 2 cups of beef broth
  • 2 large onions, sliced
  • 4 large carrots, chopped
  • 1 cup of red wine (optional)
ALLERGENS: Mustard, Garlic, Beef, Wine

Method

Step One

Preheat your oven to 325 degrees Fahrenheit. In the meantime, season your 3 pound beef roast with salt and black pepper to your liking.

Step Two

In a separate bowl, mix half a cup of brown mustard, a tablespoon of olive oil, 1/4 cup of brown sugar, 3 cloves of minced garlic, a tablespoon of thyme, and a tablespoon of rosemary. Stir until they’re well combined.

Step Three

Spread the mustard mixture evenly on all sides of your beef roast. Make sure it’s well coated.

Step Four

Place the roast on a rack in a roasting pan. Pour 2 cups of beef broth into the pan. Spread 2 large sliced onions and 4 large chopped carrots around the roast in the pan. If you wish, you can add a cup of red wine to give your roast an extra kick of flavor.

Step Five

Put the roast in your preheated oven and let it cook for about 3 hours. You’ll know it’s done when the meat is tender and easily pulls away with a fork. If you prefer your roast to be rare, you can check the internal temperature with a meat thermometer. It should read about 125 degrees Fahrenheit for rare and 145 degrees Fahrenheit for medium.

Step Six

Once your roast is done, remove it from the oven. Let it sit for 15 to 20 minutes before carving. This allows the juices to redistribute throughout the roast, resulting in a more flavorful and moist meat.

Step Seven

After resting, slice the beef and serve it with the onions, carrots, and some of the pan juices. Enjoy your Brown Mustard Spiced Roast Beef!
