What You’ll Need

  • 6 ripe tomatoes (about 1.5 lbs)
  • 2 cloves garlic, minced
  • 1 large bunch fresh basil leaves (about 2 cups loosely packed), chopped
  • 1/4 cup extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 loaf of rustic bread, cut into slices
  • 2 cloves garlic, peeled and halved

Method

Step One

Begin with preparations by thoroughly washing the tomatoes and basil leaves.

Step Two

Afterwards, chop the tomatoes into moderate sizes, then, peel and mince the cloves of garlic. Coarsely chop the fresh basil leaves as well.

Step Three

In a bowl, combine the tomatoes, minced garlic, and chopped basil leaves. Pour the extra virgin oil over the mixture, and add salt and freshly ground black pepper to taste. Then, stir ingredients together until evenly distributed.

Step Four

Place the mixture in the refrigerator to marinate for about 15-20 minutes. This will allow all the flavours to blend and enhance.

Step Five

Meanwhile, preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius). Line a baking sheet with parchment paper.

Step Six

Place your slices of rustic bread on the prepared baking sheet. Bake for about 5-7 minutes, or until the bread is toasted and golden brown.

Step Seven

Once the bread is done, remove from oven and immediately rub the cut side of the garlic over one side of each slice. This will infuse the bread with a subtle garlic flavour.

Step Eight

Finally, spoon the marinated tomato and basil mixture onto the garlic-infused side of each slice of bread. Serve immediately and enjoy this delicious Bruschetta with Tomato and Basil!
