A Tribute to Tradition with a Unique Twist

I hold a special place in my heart for dishes that carry tradition and tell a story – just like our Butter Roasted Scorzonera recipe. As a child in Texas, my kitchen experiences were heavily influenced by Tex-Mex flavors. The union of something traditional with an unexpected twist is what inspired me to create this recipe.

Butter Roasted Scorzonera

Scorzonera, despite being relatively unknown, is a delightful root vegetable that beautifully soaks up flavors from its accompaniments. In this dish, the scorzonera is bathed in a sauce made of orange juice and honey, fortified by the richness of butter, and softened with a hint of thyme. We finish it off with mixed berries and a light dusting of powdered sugar. It’s sweet and savory, earthy and vibrant – a culinary juxtaposition that really works.

A Healthful Addition to Your Table

What I love about the Butter Roasted Scorzonera is not just its taste, but also its health benefits. The root vegetable falls under root vegetables that are high in fiber and low in calories. They are excellent sources of anti-inflammatory nutrients like vitamin C and beta-carotene. When we complement this with antioxidant-rich mixed berries, we’re setting a flavorful, well-rounded, and healthful table.

The butter in this recipe embraces the richness of Southern meals that I grew up with while helping enhance absorption of fat-soluble vitamins present in the scorzonera.

Pairing and Possibilities

Given its flavor profile, Butter Roasted Scorzonera fits well with dishes heavy on proteins like a smoked brisket or a succulent roast chicken. For a lighter fare, I suggest pairing it with a tangy citrus salad or a hearty baked fish. Your creativity is the limit.

The joy of this recipe lies not just in the flavor but in the process too. It encourages you to explore the road less traveled in terms of ingredients while touching base with familiar flavors. I invite you to bring this story into your kitchen, taste the harmony of this Butter Roasted Scorzonera, and share the love with each bite.

What You’ll Need

  • 2.5 pounds of Scorzonera root
  • 1 cup of orange juice
  • 4 tablespoons of unsalted butter
  • 1/2 cup of honey
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper
  • 2 tablespoons of chopped fresh thyme
  • 1 cup of mixed berries (strawberries, blueberries, raspberries)
  • Powdered sugar for dusting
ALLERGENS: dairy

Method

Step One

Start by preheating your oven to 400 degrees Fahrenheit.

Step Two

Peel the Scorzonera roots, and then cut into half-inch thick slices. Place these slices into a large bowl, carefully pour in orange juice and then stir gently until all the slices are coated.

Step Three

In a large oven-safe skillet, melt the unsalted butter over medium heat. Add the Scorzonera slices and cook for about 5 minutes, or until they become lightly browned, frequently stirring.

Step Four

Add the honey, sea salt, freshly ground black pepper, and half of the chopped fresh thyme into the skillet. Stir gently to combine all the ingredients.

Step Five

Transfer the skillet to the preheated oven and roast for about 20 minutes, or until the Scorzonera is tender and caramelized.

Step Six

Remove the skillet from the oven and let it cool for a few minutes. Sprinkle the roasted Scorzonera with mixed berries and the remaining chopped fresh thyme.

Step Seven

Dust the dish lightly with powdered sugar before serving. Your Butter Roasted Scorzonera is now ready to be enjoyed!
