What You’ll Need

  • 2 tablespoons olive oil
  • 2 lbs mixed seafood (mussels, prawns, squid etc.)
  • 1/2 cup white wine
  • 4 cloves garlic, minced
  • 1 medium onion, finely diced
  • 1 red bell pepper, finely diced
  • 2 large tomatoes, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 cup unsalted butter
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 1 long loaf bread for serving

Method

Step One

Start by heating the olive oil in a sizeable pan over medium-high heat. Add garlic, onions, and bell pepper, stir until the vegetables are tender and the onions are slightly translucent.

Step Two

Add the assorted seafood into the pan and fry it for about 3 to 5 minutes or until it starts to change color. Pour in the white wine, and let it simmer for a few minutes until the alcohol dissipates.

Step Three

Add the finely diced tomatoes to the pan and stir everything together. Let it cook for another 5 to 6 minutes, or until the tomatoes break down and create a sort of sauce.
