What You’ll Need
- 3 pounds small red potatoes
- 1 cup capers, drained and rinsed
- 1/2 cup fresh dill, chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/3 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 3/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Method
Step One
Start by washing the small red potatoes thoroughly. After that, put them in a large saucepan, cover with water, put a lid on and then bring to a boil. When it starts boiling, reduce the heat to medium-high and continue cooking for another 15-20 minutes until the potatoes are cooked perfectly. They should be tender but not mushy when pierced with a fork. Once cooked, drain the water and allow them to cool.
Step Two
While the potatoes are cooling, prepare the salad dressing. In a medium bowl, add your cup of capers, the finely chopped red onions and celery, the chopped fresh dill, apple cider vinegar, and Dijon mustard. Stir these together until they’re well combined.
Step Three
