What You’ll Need

  • 1/2 cup of all-purpose flour
  • 1/2 cup of water
  • 1/4 cup of unsalted butter
  • 1/4 teaspoon of salt
  • 2 large eggs
  • 1 cup of heavy cream
  • 1 Tonka bean, grated
  • 2 tablespoons of powdered sugar
  • 1/2 cup of granulated sugar
  • 2 tablespoons of water (for the caramel)
  • 1 pint of mixed fresh fruit (berries, peaches, plums, etc.)

Method

Step One

Preheat your oven to 425°F (220°C). In a saucepan, combine the 1/2 cup of water, unsalted butter, and salt. Bring the mixture to a boil.

Step Two

Once it starts to boil, immediately remove the pan from heat. Stir in the all-purpose flour quickly until a smooth dough forms.

Step Three

Put the pan back on medium heat and cook the dough for about a minute, stirring constantly. This will dry out the dough a bit, making it easier to pipe onto a baking sheet.

Step Four

Remove the pan from the heat and let it cool down for a bit, about two to three minutes. After it has cooled down, beat the 2 large eggs into the dough one at a time, mixing thoroughly after each.

Step Five

Put the dough into a pastry bag with a large plain round tip. On a lined baking sheet, pipe the dough into long éclair shapes. Bake these in the preheated oven for around 20-25 minutes, or until puffed up and light golden brown.

Step Six

In the meantime, whip the heavy cream, powdered sugar, and grated Tonka bean together until light and fluffy.

Step Seven

Once the éclairs have baked and cooled, cut them open lengthwise. Fill with the Tonka bean cream and your mixed fresh fruit.

Step Eight

For the caramel topping: Place the granulated sugar and 2 tablespoons of water in a small saucepan over medium heat. Cook, without stirring, until the sugar has turned into a deep amber-hued caramel.

Step Nine
