What You’ll Need

  • 6 large eggs
  • 1 cup of fresh caraway leaves
  • 2 large potatoes, peeled and diced
  • 1 medium onion, thinly sliced
  • 2 cloves of garlic, finely chopped
  • 1/2 cup of shredded cheddar cheese
  • 2 tablespoons of olive oil
  • 1 tablespoon of unsalted butter
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper

Method

Step One

Start by heating your oven to 375 degrees Fahrenheit. This will allow for the frittata to cook evenly and thoroughly.

Step Two

Take a large oven-proof skillet and heat the olive oil over medium heat. Once the oil is hot, add in the diced potatoes. Cook until they’re browned and crisp, which should take about 10 minutes.

Step Three

Next, add the slices of onion and the finely chopped garlic to the skillet and cook for another 5 minutes, stirring until the ingredients are softened.

Step Four

While the potatoes and onions are cooking, whisk together your eggs, salt, and black pepper in a large bowl.
