What You’ll Need

  • 2 pounds of small potatoes
  • 2 tablespoons of olive oil
  • 1 1/2 teaspoon of caraway seeds
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon of fresh rosemary, chopped
  • 1 tablespoon of fresh thyme, chopped

Method

Step One

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Step Two

Thoroughly wash the small potatoes and pat them dry. If you prefer, you can peel the potatoes, but leaving the skins on will add more rustic flavor.

Step Three

Cut the potatoes in half or quarters depending on their size. The goal is to have them in bite-size pieces for even and quick roasting.

Step Four

In a large mixing bowl, toss the potatoes with the olive oil, making sure that each piece is well-coated.
