What You’ll Need

  • 1 cup Arborio rice
  • 2 cups water
  • 5 cups whole milk
  • 3/4 cup white sugar
  • 1/4 teaspoon salt
  • 9 cardamom pods
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chopped dried apricots
  • 2 tablespoons finely grated orange zest
  • Your choice of fresh fruit for serving (e.g. berries, peaches, pears, apples…)

Method

Step One

Rinse Arborio rice under cold water until the water runs clear. This helps to remove any excess starch and prevents the grains from sticking together.

Step Two

Combine the rinsed rice and the 2 cups of water in a large pot. Bring the mixture to a simmer over medium heat. Cook until the rice has absorbed all the water, this should take about 10 minutes.

Step Three

Add the whole milk, white sugar, salt and cardamom pods to the pot. Reduce heat to low and simmer, stirring frequently to prevent the rice from sticking to the bottom of the pot. Continue to cook until the mixture thickens and the rice is tender, this should take about 30 – 40 minutes.

Step Four

While the rice mixture is simmering, chop the dried apricots and grate the orange zest. Have it ready to be used.

Step Five

Once the rice is done, remove the pot from heat. Discard the cardamom pods and then stir in the pure vanilla extract, chopped apricots and orange zest.

Step Six

Serve your Cardamom Rice Pudding warm or transfer it into a dish and refrigerator to chill for at least 2 hours before serving. You can serve it with your choice of fresh fruit. Enjoy!
