What You’ll Need
- 4 large sweet potatoes
- 6 medium carrots
- 1/2 cup of unsalted butter
- 1/4 cup of honey
- 2 tablespoons of brown sugar
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of chopped pecans
- 1/4 cup of dried cranberries
- 1 tablespoon of fresh orange zest
Method
Step One
Preheat your oven to 375 degrees Fahrenheit. While the oven is preheating, peel the sweet potatoes and carrots. Cut them into 1-inch chunks and place them in a large pot of water. Bring the pot to a boil and let the vegetables cook for about 15-20 minutes, or until they are tender. Then drain the water from the pot.
Step Two
While the vegetables are boiling, in a separate saucepan, combine the butter, honey, brown sugar, cinnamon, nutmeg, salt, and pepper. Heat the mixture on medium heat, stirring occasionally until the butter has fully melted and the mixture is well combined.
Step Three
Add the cooked sweet potatoes and carrots to a large casserole dish. Pour the butter and spice mixture over the vegetables and toss them until they are all well coated. Spread the vegetables out evenly in the dish.
Step Four
Scatter the chopped pecans and dried cranberries over the top of the vegetables. Place the casserole in the oven and bake for 25-30 minutes, or until the top has started to brown and become crispy.
Step Five
Remove the casserole from the oven and let it cool slightly. Before serving, sprinkle the fresh orange zest over the top of the casserole. Enjoy!
