What You’ll Need
- 1 large head of cauliflower
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 large carrots, finely diced
- 1 bell pepper, finely diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup diced pineapple
- 1 cup diced mango
- 1 cup diced strawberries
- 1/2 cup raisins
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- Salt and pepper to taste
- 2 green onions, chopped
Method
Step One
First, remove the leaves and stem from the cauliflower. Break it into florets and then pulse them in a food processor until they reach a rice-like consistency. Set this aside for later use.
Step Two
Heat the olive oil in a large pan over medium heat. Add in the chopped onion, diced carrots, and diced bell pepper to the pan and sauté until they are softened, usually about 5-7 minutes.
Step Three
