What You’ll Need

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 jalapeno pepper, seeds removed, chopped
  • 2 large tomatoes, chopped
  • 6 cups vegetable broth
  • 4 cups chaya leaves, rinsed and roughly chopped
  • 1 cup fresh corn kernels
  • 1 cup diced zucchini
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste
  • Sliced avocado, for serving
  • Lime wedges, for serving

Method

Step One

Heat the vegetable oil in a large soup pot. Add the chopped onion, minced garlic, and chopped jalapeno pepper. Saute these ingredients until the onions become translucent and the garlic is fragrant.

Step Two

Add the chopped tomatoes to the pot, stirring them in until they soften and begin to release their juices. This should take about 5 minutes.

Step Three

Pour in the vegetable broth and bring the mixture to a boil.

Step Four

Once the broth is boiling, add the chaya leaves, corn kernels, diced zucchini, and chopped cilantro. Reduce the heat and let the soup simmer for approximately 20 minutes, or until the chaya leaves and zucchini are tender.

Step Five

Add salt and pepper according to your taste preference. Stir the soup well to thoroughly mix in the seasonings.

Step Six
