What You’ll Need

  • 3 medium chayotes, peeled and julienned
  • 2 medium carrots, peeled and julienned
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice (about 2 limes)
  • 1/4 cup extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 avocado, diced

Method

Step One

In a large mixing bowl, combine the julienned chayotes, julienned carrots, and thinly sliced red onion.
