What You’ll Need

  • 2 eggs
  • 1/2 cup of melted butter (plus a little more for frying)
  • 1 1/2 cups of milk
  • A pinch of salt
  • 1 tablespoon of sugar
  • 1/4 cup finely chopped fresh chervil
  • 1/4 cup finely chopped fresh chives
  • 2 cups mixed fresh fruits (berries, peaches, bananas, etc.)
  • 1/2 cup powdered sugar for dusting
  • Fresh whipped cream for serving (optional)

Method

Step One

Start by combining 1 cup of all-purpose flour, a pinch of salt, and 1 tablespoon of sugar in a large bowl. Stir them together until they are well mixed.

Step Two

Next, break the 2 eggs into a separate bowl, then pour in the 1 1/2 cups of milk and half a cup of melted butter. Whisk these ingredients together until they are fully combined.

Step Three

Slowly add the wet ingredients to the dry ingredients, stirring continuously to prevent lumps from forming. This will create your crepe batter. This batter should be smooth and slightly runny, if it’s too thick, feel free to add a little more milk. Now is also the right time to add in the finely chopped fresh chervil and chives. Stir them in until they are evenly distributed throughout the batter.

Step Four

Heat a bit of butter in a non-stick pan over medium heat. Once the butter has melted and the pan is hot, pour in a small amount of the crepe batter. Tilt the pan to spread the batter evenly across the surface. Cook the crepe until the edges start to lift from the pan, and the bottom is lightly browned, this should take about 2-3 minutes. Then flip the crepe and cook the other side for a further 1-2 minutes.

Step Five

Repeat this process until all the batter is used. You should have a pile of thin, delicate crepes. Carefully dust each crepe with the powdered sugar and arrange some fresh fruits on top.
