What You’ll Need
- 2 lbs boneless, skinless chicken breast, cut into thin strips
- 2 large white onions, thinly sliced
- 3 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 1 cup of snow peas
- 1 red bell pepper, thinly sliced
- 2 tablespoons of olive oil
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of cornstarch
- 1/2 cup of chicken broth
- Salt and pepper to taste
- Cooked rice for serving
Method
Step One
Start by prepping all of your ingredients. Slice your chicken breasts into thin strips and set them aside. Thinly slice your 2 large white onions and 1 red bell pepper. Mince your 3 cloves of garlic and 1 inch piece of ginger.
Step Two
Heat 2 tablespoons of olive oil in a large frying pan or wok over medium-high heat. Once the oil is hot, add the sliced chicken and season with salt and pepper. Cook until the chicken is lightly browned and cooked through, stirring occasionally.
Step Three
Add your thinly sliced onions, minced garlic, and minced ginger to the pan. Cook until the onions are translucent and the garlic and ginger are fragrant.
Step Four
In a small bowl, mix together 1 tablespoon of cornstarch and 1/2 cup of chicken broth until it forms a slurry. Set aside.
Step Five
Add the sliced red bell pepper and 1 cup of snow peas to the pan and stir. Cook for a few minutes until the vegetables are just beginning to soften.
Step Six
Pour the chicken broth and cornstarch mixture, along with 2 tablespoons of soy sauce and 1 tablespoon of oyster sauce, into the pan with the chicken and vegetables. Stir the contents of the pan until everything is well coated in the sauce.
Step Seven
Continue to cook the stir fry until the sauce has thickened and the vegetables are cooked to your liking.
Step Eight
Taste and adjust seasonings, if necessary. Serve your Chicken and White Onion Stir Fry warm, preferably over cooked rice. Enjoy your meal!
