What You’ll Need

  • 6 boneless skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 cup of mango juice
  • 1 large ripe mango, diced
  • 1 red bell pepper, finely chopped
  • 3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1 jalapeno pepper, seeds removed and minced
  • 1/2 cup of fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Method

Step One

Begin by seasoning the chicken breasts on both sides with salt and pepper to taste. In a large frying pan, heat the olive oil over medium-high heat. Once hot, add the chicken breasts to the pan and cook until golden brown and cooked through. This should take approximately 6-7 minutes per side depending on the thickness of the chicken.

Step Two

While the chicken is cooking, start preparing the mango sauce. Begin by finely chopping the red bell pepper, onion, and jalapeno, ensuring to remove the seeds from the jalapeno first. Peel and dice the ripe mango and mince the garlic cloves.

Step Three
