Among the countless recipes I have come to love over the years, the Chicken in Red Rice Powder Marinade is an exceptional standout. Born out of my love for the flavors of my Texas upbringing, this dish is more than a testament to my culinary inspiration. It’s indulgent, invigorating and offers a distinctive twist to a classic delicacy.
The Power of Tex-Mex in a Dish
This recipe earns its distinction by seamlessly fusing the vibrancy of Tex-Mex cuisine with the familiarity and comfort of Southern cooking. Laced with a compelling mix of chicken, flavor-filled marinade and fruits, it is as visually delightful as it is indulgently tasty. The chicken breasts are treated to a rustic marinade featuring red rice powder and soy sauce – two star components of many Tex-Mex recipes. Add a touch of honey, olive oil, garlic and ginger, and the flavors burst like a Southern summer sunset.
Modern Twist and Health Benefits
Presented with a modern twist on a classic recipe, this dish uses fresh fruits in ways we seldom see in traditional Southern cooking. Through this little innovation, the plate gets injected with delightful flavors, and also increases the health benefits. The assorted fruits introduce a cocktail of essential vitamins and antioxidants that complement the protein-rich chicken. Indeed, chicken is known to be an excellent source of essential nutrients. Furthermore, fruits, particularly citrus ones, have been proven to be nutritional powerhouses. This recipe does not only satisfy your tastebuds but contributes positively to your health as well.
A Versatile Culinary Component
The Chicken in Red Rice Powder Marinade fits wonderfully as a main dish for any formal or casual dining experience. It pairs beautifully with various sides, from the good ol’ Texas-style fries to a light green salad. It is reminiscent of Slow Cooker Chicken Taco Soup, another beloved Tex-Mex recipe given a healthier spin. It also works wonders with classic Southern dishes like Kickin’ Collard Greens for a fuller dining experience.
To me, this particular recipe is a trip down memory lane — a delightful blend of the flavors of my upbringing with the food creativity I’ve embraced over the years. Here’s to hoping you enjoy this recipe as much as I do. Happy cooking!
What You’ll Need
- 6 chicken breasts
- 1 cup red rice powder
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon sesame seeds
- 2 tablespoons lime juice
- 1/2 cup orange juice
- Salt and pepper to taste
- Assorted fruits for garnish (e.g. pineapple slices, orange segments, etc.)
Method
Step One
Start by patting dry the 6 chicken breasts and then place them in a large bowl. Season the chicken breasts with salt and pepper on both sides as per your taste.
Step Two
In a separate bowl, whisk together 1 cup red rice powder, 2 tablespoons soy sauce, 1 tablespoon honey, 1/4 cup olive oil, 2 cloves of minced garlic, 1 tablespoon minced ginger, 1 tablespoon sesame seeds, 2 tablespoons lime juice and 1/2 cup orange juice. Once, these ingredients are well combined, pour the mixture over the chicken.
Step Three
Make sure each piece of chicken is covered in the marinade. If necessary, use your hands to spread the marinade and get it on all the corners of the chicken. Once done, cover the bowl and place it in the refrigerator for at least 3 hours, although overnight marination will offer enhanced flavor.
Step Four
After marination, preheat your grill or stove-top pan on medium heat. Place your chicken on the grill, discarding remaining marinade. Cook each side for about 6-7 minutes, or until the chicken is no longer pink in the center. If you have a meat thermometer, the chicken should reach an internal temperature of 165°F.
Step Five
Once your chicken is cooked, let it rest for a few minutes before you serve it. Garnish the Chicken in Red Rice Powder Marinade with an assortment of fruits like pineapple slices and orange segments. This adds a touch of freshness and beautiful color to your dish. Serve warm.
