What You’ll Need

  • 3 lbs Boneless Chicken
  • 3 tablespoons Olive Oil
  • 3 Garlic cloves, minced
  • 2-inch piece of Ginger, peeled and finely chopped
  • 3 tablespoons Kala Zeera (black cumin seeds)
  • 2 tablespoons Garam Masala
  • 1 tablespoon Turmeric Powder
  • 1 tablespoon Paprika
  • 1.5 tablespoons Kosher Salt
  • 1 teaspoon Cayenne Pepper, optional for extra heat
  • 3 cups Tomatoes, diced
  • 1.5 cups Plain Greek Yogurt
  • 2 tablespoons Lemon Juice
  • 6 tablespoons Fresh Cilantro, finely chopped
  • 3 cups Basmati Rice, cooked
ALLERGENS: Chicken, Olive Oil, Garlic, Ginger, Plain Greek Yogurt, Basmati Rice

Method

Step One

In a large pan, heat the olive oil over medium heat. Add in the minced garlic and finely chopped ginger, sautéing until just starting to brown.

Step Two

Add in the Kala Zeera (black cumin seeds) and sauté for about 2 minutes, or until they start to sizzle and pop. Be careful not to let them burn.

Step Three

Now, add the boneless chicken pieces to the pan. Cook until all sides are browned.

Step Four

Reduce the heat to low and add the garam masala, turmeric powder, paprika, kosher salt, and cayenne pepper (if using) to the pan. Stir well so that all the chicken is coated with the spices.

Step Five

Add the diced tomatoes to the pan and stir well, scraping up any browned bits from the bottom of the pan.

Step Six

Cover the pan and let everything simmer together for about 15 minutes, or until the chicken is fully cooked.

Step Seven

After the chicken is done, stir in the plain Greek yogurt, lemon juice, and half of the freshly chopped cilantro.

Step Eight

Allow the dish to simmer for another 5 minutes so that the flavors can meld together.

Step Nine

Serve the Chicken Kala Zeera Masala over the cooked basmati rice, garnishing with the remaining cilantro just before serving.
