Chickweed and Goat Cheese Quiche

Flavor Fusion and Nutrient-Rich Chickweed

For the uninitiated, chickweed might feel like an unlikely guest to a quiche party. But, believe me, its mild flavors work wonders with the robust taste of goat cheese, thereby, creating a harmonious flavor fusion. While the mention of chickweed often brings up images of unwanted garden invader, to me, it signifies a nutrient-rich powerhouse enshrined in Southern tradition. This versatile, fast-growing plant is packed with vital minerals and vitamins, offering numerous health benefits.

Quintessential Comfort Food

This quiche, rich and creamy on the inside with a crispy shell, is quintessential comfort food. While this recipe stands tall on its own merits, it can also share the spotlight gracefully with other dishes, say a crisp green salad or a spicy Lowcountry Shrimp boil. It’s flexible like that.

Oh, and did I mention how much I enjoy baking this quiche in a pre-made pie crust? For an always-on-the-go surfing enthusiast like me, a time-saving trick is nothing short of a savior. Plus, the uniform, golden brown crust gives a rustic charm to the presentation!

This Chickweed and Goat Cheese Quiche serves up a delectable dose of nostalgia with each bite, drawing on the comforting Southern culinary traditions I hold so dear to my heart.

What You’ll Need

  • 1 pre-made 9-inch pie crust
  • 2 cups fresh chickweed, washed and chopped
  • 1 cup goat cheese, crumbled
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
ALLERGENS: Gluten, Dairy, Eggs

Method

Step One

Preheat your oven to 375 degrees Fahrenheit and place the pie crust in a 9-inch pie dish.

Step Two

Heat the tablespoon of olive oil in a sauté pan over medium heat. Add the diced onion, bell pepper, and minced garlic to the pan. Sauté these ingredients until they are soft which will take about 5 minutes.

Step Three

Add the chopped chickweed to the pan, and continue to sauté for another 2-3 minutes, until the chickweed is wilted and bright green.

Step Four

In a large mixing bowl, beat the 4 eggs. To the beaten eggs, add the whole milk, heavy cream, salt, and black pepper. Stir these ingredients until they are well combined.

Step Five

Add the sautéed vegetables and crumbled goat cheese to the egg mixture. Stir until these ingredients are evenly distributed throughout the mix.

Step Six

Pour the egg and veggie mixture into the prepared pie crust. The pie dish can be placed on a baking sheet to catch any possible spills.

Step Seven

Bake the quiche in the preheated oven for 35-40 minutes, or until the center of the quiche is set and the top is lightly browned.

Step Eight

Take the quiche out of the oven and let it cool for at least 5 minutes before serving. Enjoy your Chickweed and Goat Cheese Quiche!
