What You’ll Need

  • 2 cups of fresh chicory leaves
  • 1 cup of fresh basil leaves
  • 1/2 cup of walnuts
  • 3 cloves of garlic
  • 3/4 cup of grated Parmesan cheese
  • 1/2 cup of extra-virgin olive oil
  • 1 teaspoon of lemon juice
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper
  • 1 pound of pasta of your choice

Method

Step One

Begin by gathering all your ingredients. This will make the cooking process faster and more efficient.

Step Two

Pick over the chicory and basil leaves to make sure there are no damaged or wilted pieces. Rinse both types of leaves thoroughly under cool running water and pat them dry using a clean tea towel or paper towel.

Step Three

Place cleaned chicory leaves, basil leaves, garlic cloves, walnuts, Parmesan cheese, sea salt, black pepper, and lemon juice in a food processor. Process until the ingredients are finely chopped.

Step Four

While the food processor is running, slowly drizzle in the olive oil until the mixture becomes smooth and creamy. If the pesto is too thick, you can loosen it by adding a little more olive oil.

Step Five

Now it’s time to cook the pasta. Bring a large pot of water to a boil. Add a generous amount of salt to the boiling water before adding the pasta. Cook the pasta according to the instructions on the package until it is al dente.

Step Six

Drain the pasta, reserving some of the pasta water. Return the pasta to the pot and add the pesto. Toss well, adding some of the reserved pasta water if necessary to loosen the sauce. Continue to toss until the pasta is well coated with the pesto.
