What You’ll Need

  • 2 cups of Mozuku Seaweed (prepacked)
  • 3 tablespoons of Soy Sauce
  • 2 tablespoons of Rice Vinegar
  • 2 tablespoons of Sugar
  • 3 tablespoons of Sesame Oil
  • 1/2 cup of Sesame Seeds (toasted and ground)
  • 2 Oranges (peeled and separated into segments)
  • 1 Grapefruit (peeled and separated into segments)

Method

Step One

Start by preparing the Mozuku seaweed. If it’s prepacked and salted, rinse it under cold water to get rid of the excess salt. Leave it in a sieve to drain the water.

Step Two

Next up, in a bowl, combine the soy sauce, rice vinegar, sugar, and sesame oil. Stir continuously until the sugar is completely dissolved to create your sesame sauce.

Step Three

Grind your toasted sesame seeds in a pestle and mortar or a seed grinder until it resembles a coarse powder. Add this powder to your sesame sauce, stirring until it becomes well combined.

Step Four

Add the drained seaweed to the sesame sauce. Toss it around lightly until all the seaweed is coated in the sauce. Cover the bowl with a lid or cling film and refrigerate for at least 30 minutes to allow the flavours to meld together.

Once the seaweed has chilled, remove it from the fridge. Add in the chilled orange and grapefruit segments, gently folding them into the seaweed without crushing the fruit.
