What You’ll Need

  • 2 lbs fish fillets (like cod, tilapia, or sea bass)
  • 1 tablespoon rice wine
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons ginger, julienned
  • 6 scallions, julienned, whites and greens separated
  • 1 red chili pepper, sliced
  • 1/2 tablespoon cornstarch mixed with 1 tablespoon water
  • 6 mushrooms, sliced
  • 1 carrot, julienned
  • 2 zucchinis, julienned
  • 2 tablespoons vegetable oil
  • 1/2 cup cilantro for garnish (optional)

Method

Step One

Clean the fish fillets properly and pat dry. Now, place the fillets evenly in a heat-proof dish that can be used for steaming.

Step Two

In a small bowl, mix the rice wine, soy sauce, sugar, and sesame oil. Stir the mixture until the sugar is completely dissolved.

Step Three

Pour the prepared sauce over the fish fillets. Then, sprinkle the fish with ginger, scallion whites and red chili pepper. Let the fish marinate for about 15 to 30 minutes.

Step Four

In a steamer, bring the water to a boil. Now, place the dish with the fish in the steamer and steam it for about 7 to 10 minutes. Carefully remove the fish from the steamer.

Step Five

In a small saucepan, heat the vegetable oil. Sauté the mushrooms, carrot, and zucchini until they are tender. Add the scallion greens and continue to sauté for one more minute.

Step Six

In the same saucepan, make space at the center and add the cornstarch mixture. Stir constantly until the sauce becomes thick.

Step Seven

Pour the sauce over the cooked fish. Garnish it with cilantro if desired. Your Chinese Steamed Fish with Ginger and Scallions is ready to serve. Enjoy it hot.
