What You’ll Need

  • 2 cups All-purpose Flour
  • 3 Large Eggs
  • 1 tablespoon Olive Oil
  • Salt, a pinch
  • 1/2 cup Parmesan, freshly grated
  • 1/4 cup Fresh Chives, finely chopped
  • 2 tablespoons Unsalted Butter
  • 3/4 cup Ricotta Cheese
  • 2 cups Marinara Sauce
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice
  • 1 cup Mixed Fresh Fruit, diced (such as Strawberries, Kiwi, and Pineapple)

Method

Step One

To get started, combine 2 cups of all-purpose flour, 3 large eggs, 1 tablespoon of olive oil and a pinch of salt in your food processor. Blend these ingredients until they form a smooth and elastic dough. Once done, transfer your dough onto a floured surface, knead for a few minutes and then wrap it in a plastic wrap. Let it rest for about half an hour.

Step Two

While your dough is resting, prepare the filling. In a mixing bowl, combine 1/2 cup of freshly grated Parmesan, 1/4 cup of finely chopped fresh chives, 2 tablespoons of unsalted butter at room temperature, 3/4 cup of Ricotta cheese, 1 tablespoon of lemon zest, 1 tablespoon of lemon juice. Mix these ingredients until everything is properly blended.

Step Three

Now, roll out your dough into a thin sheet. Cut it into squares or circles, using a cookie cutter or pasta cutter. Scoop a spoonful of the prepared filling onto one half of each pasta piece. Fold the other half of the dough over the filling, crimping the edges to seal. Repeat this process until all your dough and filling is used up.

Step Four

Place a large pot of salted water on high heat and bring it to a rolling boil. Carefully drop in your prepared ravioli, and cook for about 3-5 minutes, or until they float to the surface and are cooked through. Use a slotted spoon to remove the cooked ravioli from the water and drain well.

Step Five

Finally, heat up 2 cups of marinara sauce in a saucepan over medium heat. Add your cooked ravioli to the sauce, gently stirring to make sure all the ravioli pieces are coated with the sauce. Allow them to simmer in the sauce for a couple of minutes to let the flavors meld together.
