What You’ll Need
- 2 cups All-purpose Flour
- 3 Large Eggs
- 1 tablespoon Olive Oil
- Salt, a pinch
- 1/2 cup Parmesan, freshly grated
- 1/4 cup Fresh Chives, finely chopped
- 2 tablespoons Unsalted Butter
- 3/4 cup Ricotta Cheese
- 2 cups Marinara Sauce
- 1 tablespoon Lemon Zest
- 1 tablespoon Lemon Juice
- 1 cup Mixed Fresh Fruit, diced (such as Strawberries, Kiwi, and Pineapple)
Method
Step One
To get started, combine 2 cups of all-purpose flour, 3 large eggs, 1 tablespoon of olive oil and a pinch of salt in your food processor. Blend these ingredients until they form a smooth and elastic dough. Once done, transfer your dough onto a floured surface, knead for a few minutes and then wrap it in a plastic wrap. Let it rest for about half an hour.
Step Two
While your dough is resting, prepare the filling. In a mixing bowl, combine 1/2 cup of freshly grated Parmesan, 1/4 cup of finely chopped fresh chives, 2 tablespoons of unsalted butter at room temperature, 3/4 cup of Ricotta cheese, 1 tablespoon of lemon zest, 1 tablespoon of lemon juice. Mix these ingredients until everything is properly blended.
Step Three
Now, roll out your dough into a thin sheet. Cut it into squares or circles, using a cookie cutter or pasta cutter. Scoop a spoonful of the prepared filling onto one half of each pasta piece.
