What You’ll Need
- 6 cups vegetable broth
- 1 pound firm tofu, cubed
- 3 tablespoons soy sauce
- 1 tablespoon fresh lime juice
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 2 medium carrots, thinly sliced
- 2 stalks celery, thinly sliced
- 1 red bell pepper, seeded and thinly sliced
- 8 ounces mushrooms, thinly sliced
- 2 green onions, thinly sliced
- 2 tablespoons fresh ginger, grated
- 1/2 teaspoon crushed red pepper flakes
- Salt to taste
- Freshly ground black pepper to taste
- Fresh cilantro leaves for garnish
Method
Step One
First, heat the vegetable oil over medium-high heat in a large pot. Saute the garlic, onion, ginger, and crushed red pepper flakes in the hot oil until the onions become translucent. This should take about 5 minutes.
Step Two
Add the carrots, celery, red bell pepper and mushrooms to the pot. Stir well and allow the vegetables to cook for another 5 minutes until they start to soften.
Step Three
Now add the cubed tofu to the pot. Stir gently to combine these ingredients and continue cooking for another 3 to 5 minutes.
Step Four
Next, pour the vegetable broth into the pot and stir in the soy sauce and lime juice. Bring the soup to a simmer and allow it to cook for about 10 to 15 minutes, until the vegetables are tender.
Step Five
After the soup is thoroughly cooked, season it with salt and freshly ground black pepper to taste. Stir the soup well to distribute the seasonings.
Step Six
Finally, serve the clear tofu soup hot, garnished with thinly sliced green onions and fresh cilantro leaves on top.
