What You’ll Need

  • 1.5 lbs firm white fish fillets
  • Salt, to taste
  • Ground black pepper, to taste
  • 1.5 cups American panko crumbs
  • Zest and juice of 3 limes
  • 1 cup shredded unsweetened coconut
  • 3 tablespoons vegetable oil
  • 6 hamburger buns
  • Mayonnaise, to taste
  • Lettuce leaves, to garnish
  • Sliced tomatoes, to garnish

For the Slaw

  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 2 shredded carrots
  • 3 green onions, thinly sliced
  • 3/4 cup mayonnaise
  • 2 tablespoon white sugar
  • 1.5 tablespoons apple cider vinegar
  • 1.5 tbsp. lime juice
  • Salt and ground black pepper to taste

Method

Step One

Begin by seasoning the fish fillets with salt and pepper to taste. Next, place the American panko crumbs, lime zest and juice, shredded unsweetened coconut, and oil in a food processor. Blend these ingredients until you have a rough paste. Use this mixture to coat each side of your fish fillets, pressing gently to ensure that it adheres.

Step Two

Next, heat the vegetable oil in a large frying pan over medium heat. Add the fish fillets and cook for three to four minutes on each side, or until the fish is cooked through and the crust is golden and crisp. Remove the fillets from the pan and set them aside.

Step Three

While the fish is cooking, prepare the slaw. In a large bowl, combine the shredded green and red cabbage, shredded carrots, and thinly sliced green onions. In a separate smaller bowl, whisk together the mayonnaise, white sugar, apple cider vinegar, lime juice, salt and pepper. Pour this dressing over the cabbage mixture and toss well to combine.

Step Four

To assemble the burgers, spread a generous layer of mayonnaise on the bottom half of each bun. Place a cooked fish fillet on top of the mayonnaise, followed by a healthy topping of the prepared slaw. Finish with additional garnishes like lettuce leaves and sliced tomatoes, if desired. Place the top half of the bun on each burger, and serve immediately.
