As a Midwesterner, I’ve always been inspired by the rich, hearty flavors of my region. But every once in a while, I like to venture away from the lands of beefs and corn, and embrace dishes that are refreshing, delightful, and full of tropical flavors, like this [Coconut Sago Dessert Recipe](https://yourgourmetguru.com/recipe/coconut-sago-dessert-recipe/).
This authentic Asian dessert, I must say, is a delightful rebalance of my palette. It reminds me a bit of the tapioca puddings we used to have at the local church potluck back in Nebraska, but with an exotic twist.
A Journey of Health and Flavor
The Coconut Sago Dessert Recipe employs ingredients that are not just tantalizing to the taste buds but also bring pleasant surprises to your health. Sago pearls, for example, are rich in carbohydrates which provides plenty of energy. Coconut milk is high in healthy fats and have numerous health benefits, including weight loss. After digging into enough casseroles and stews, I welcome that. The mixed in fruits like ripe bananas, canned pineapples and mangoes offer an abundance of vitamins and fiber.
Versatility of the Recipe
This recipe is very versatile in its presentation. Want to surprise your guests at a summer garden party? The fresh, light flavors of this dessert will pair wonderfully with the grill menu. Or, serve it as a refreshing dessert after a heavy winter meal to help cleanse the palette. You’re only ever limited by your creativity with the Coconut Sago Dessert Recipe.
Similar to the traditional Filipino dessert called ‘Ginataang Bilo Bilo’ and the Thai dessert ‘Tab Tim Grob’, this recipe incorporates the creaminess of coconut milk and the delightful chewiness of sago. But what sets it apart is the added goodness of mixed fruits. Need a side dish for pairing? I would suggest serving it with a [Filipino Lechon](https://www.kawalingpinoy.com/lechon/) or a [Thai Green Curry](https://www.bbc.co.uk/food/recipes/thai_green_curry_93344). The rich, spicy and meaty flavors of those dishes will be excellently pacified by the sweet, cooling properties of this dessert.
What You’ll Need
- 1 cup of sago pearls
- 2 cups of water
- 2 cups of coconut milk
- 1/2 cup of sugar
- 1/4 teaspoon of salt
- 2 ripe bananas, sliced
- 1 cup canned pineapples, cubed
- 1/2 cup of mango, cubed
- 1/4 cup of shredded coconut, toasted
- Mint leaves for garnish (optional)
Method
Step One
Start by rinsing the sago pearls under cold water until the water runs clear. After rinsing, let them soak in water for about 10 minutes.
Step Two
In a medium-sized saucepan, bring the 2 cups of water to a boil. Add in the soaked sago pearls and cook them on medium heat till they turn translucent. This should roughly take 10 to 15 minutes. Be sure to stir frequently to ensure the pearls don’t stick to the bottom of the pot.
Step Three
In the meantime, you can start preparing the sweet coconut sauce. In a separate saucepan, add the 2 cups of coconut milk, 1/2 cup of sugar, and 1/4 teaspoon of salt. Stir well and heat it over low heat until the sugar dissolves completely. Be cautious not to let the mixture come to a boil.
Step Four
Once the sago pearls have cooked, drain them and rinse under cold water to remove any extra starch. Add the drained sago pearls to the sweet coconut sauce and mix well to combine.
Step Five
Add the sliced bananas, cubed pineapples and mango to the pot and mix well. Let the mixture simmer for about 5-10 minutes to allow the flavors to combine.
Step Six
Your Coconut Sago Dessert is ready! Serve it in individual bowls, sprinkle some toasted shredded coconut on top for added texture, garnish with mint leaves (if using), and enjoy!
