What You’ll Need
- 6 cod fillets, about 6 ounces each
- 1/2 cup of flour
- 6 tablespoons of unsalted butter
- 1 cup of dry white wine
- 2 shallots, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup of heavy cream
- Salt and pepper to taste
- 2 tablespoons of chopped fresh parsley
- 2 tablespoons of lemon juice
- 1 tablespoon of vegetable oil
Method
Step One
Rinse the cod fillets, pat dry with a paper towel, and season with salt and pepper on both sides. Then, lightly dust each fillet with flour, shaking off any excess.
Step Two
Heat 4 tablespoons of the butter and the vegetable oil in a large skillet over medium heat. Once the butter has melted, add the fillets to the skillet. Cook for about 4-5 minutes on each side, or until the fish is golden brown and cooked through. Remove the fillets from the skillet and set them aside to keep warm.
Step Three
In the same skillet, add the shallots and garlic and cook over medium heat until they start to soften and become fragrant. This should take about 2 minutes.
