What You’ll Need
- 1 large fresh Conger Eel (about 2 pounds)
- 2 cups sushi rice
- 3 cups water
- 1/2 cup rice vinegar
- 4 tablespoons sugar
- 2 teaspoons salt
- 1/4 cup soy sauce
- 1/4 cup mirin (Japanese sweet rice wine)
- 2 tablespoons sake
- 1/4 cup granulated sugar
- 6 pieces of nori (seaweed)
Method
Step One
Start by preparing the sushi rice. Rinse the rice under cold water until the water runs clear. Add the rice and the 3 cups of water to a rice cooker and cook according to the manufacturer’s instructions.
Step Two
