What You’ll Need
- 1.5 cups basmati rice
- 3 cups water
- 2 tablespoons vegetable oil
- 1 tablespoon coriander seeds
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1 cup chopped mixed fruit (e.g. pineapple, mango, apple)
- 3 tablespoons raisins
- 1/2 cup chopped fresh cilantro
- 1 tablespoon lemon juice
Method
Step One
First rinse the basmati rice under cold water until the water runs clear. This removes the starch and helps prevent clumping. Set the rice aside to drain.
Step Two
In a large saucepan, bring the 3 cups of water to a boil. Once boiling, add the rinsed basmati rice. Reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the water is fully absorbed by the rice.
Step Three
While the rice is cooking, heat the 2 tablespoons of vegetable oil in a small frying pan. Add the coriander seeds to the hot oil and cook them over medium heat, stirring frequently until they begin to pop and release their aroma (this should take about 1-2 minutes).
Step Four
Add the ground turmeric and salt to the coriander seeds and stir it all together. Once mixed, remove from heat.
Step Five
When the rice is done cooking, remove it from the heat and let it sit, still covered, for 5 minutes. After this, fluff the rice with a fork.
Step Six
Transfer the rice to a large bowl. Add the coriander seed mixture, chopped mixed fruit, raisins, chopped fresh cilantro, and lemon juice. Stir everything together until it’s well combined.
