Corn Chowder

There’s something utterly comforting about a bowl of Corn Chowder. This hearty recipe holds a special place in my heart, reminiscent of afternoons spent in the kitchen with my Italian grandparents. Though it harkens more to American roots than Italian, the warmth and flavors evoke a similar sense of family and tradition.

Nostalgic Comfort in a Bowl

One of the reasons I adore this Corn Chowder is its ability to bring you back to simpler times. The creamy, savory broth, punctuated by the sweetness of fresh corn, is a satisfying reminder of home-cooked meals that nourish the soul as much as the body. It’s a dish that’s versatile enough to be served as a main course or as an accompaniment to a larger meal, pairing beautifully with a summer salad or a crusty artisan bread.

The inclusion of bacon elevates the dish, adding a smoky depth that complements the sweetness of the corn and the creaminess of the potatoes. It’s a balanced, well-rounded combination that pleases the palate. For those who prefer a vegetarian option, simply swap out the bacon and use vegetable broth—this Corn Chowder still stands robust and full of flavor.

Health Benefits

This chowder isn’t just delicious; it’s also packed with nutrition. Corn is a great source of fiber, vitamins, and antioxidants, offering benefits ranging from improved digestion to reduced risk of chronic diseases like heart disease. Potatoes, another key ingredient, are rich in vitamins C and B6, potassium, and manganese. They provide an energy boost thanks to their complex carbohydrates. When paired with fresh parsley, which is rich in vitamin K and C, and the immune-boosting properties of garlic and onion, this chowder becomes a nutritional powerhouse.

The choice of broth also makes a difference. Opting for chicken broth adds a layer of protein, while using vegetable broth keeps it vegan-friendly and rich in essential nutrients. Smoky paprika and freshly chopped parsley add vibrant color and depth to the dish, making it not just a feast for the stomach but also for the eyes.

If you’re a fan of this Corn Chowder, you might enjoy similar recipes like Chicken and Corn Soup or Potato Leek Soup. And if you’re looking to create a more elaborate meal, consider pairing this chowder with a grilled cheese sandwich or a light, tangy coleslaw to balance the creamy richness.

In the end, what makes this Corn Chowder truly special is its ability to bring people together. Whether it’s a weekday dinner with the family or a weekend gathering with friends, this dish always manages to warm the hearts and fill the bellies of everyone at the table.

What You’ll Need

  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups fresh corn kernels (about 6 ears of corn)
  • 1 large russet potato, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons fresh parsley, chopped
ALLERGENS: Dairy

Method

Step One

In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.

Step Two

Add the diced onion to the pot and sauté in the bacon fat until translucent, about 4-5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step Three

Stir in the fresh corn kernels and diced potato. Cook for about 5 minutes, stirring occasionally.

Step Four

Pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

Step Five

Using an immersion blender, partially blend the chowder to your desired consistency. If you don’t have an immersion blender, you can transfer half of the chowder to a regular blender, blend until smooth, and then return it to the pot.

Step Six

Stir in the heavy cream, salt, black pepper, and smoked paprika. Let the chowder simmer for an additional 5-10 minutes, allowing the flavors to meld together.

Step Seven

Serve the corn chowder hot, garnished with the crispy bacon pieces and chopped fresh parsley.
