As a woman of Gujarati descent who was born and raised on the West Coast of America, I have always sought to create dishes that resonate with both sides of my heritage – and my Costmary and Rosemary Roasted Potatoes are no exception.
Infused with the bright flavors of fresh costmary and rosemary, these roasted potatoes are a perfect blend of the rustic comfort of American cuisine and the aromatic sophistication of Indian spices. Yet the beauty of this dish lies not merely in its delectable taste, but also in its wholesome nutritional benefits.
Fusion Cuisine at Its Finest
Coming up with a recipe that balances the vibrant complexity of Gujarati cuisine with the wide-ranging and accessible appeal of West Coast American dishes can be a real challenge. However, in these Costmary and Rosemary Roasted Potatoes, I feel I’ve struck gold. The result? A dish that not only bridges two worlds but also one that’s simply a joy to eat.
For those unfamiliar, costmary is an herb that is often found in traditional Indian cooking. It boasts a wonderfully unique aroma and flavor profile – at once minty, tangy, and slightly sweet – making it an excellent partner for the classic earthy rosemary that we so often associate with hearty, homestyle American cuisine.
Health Benefits of This Dish
The health benefits of this dish are numerous, given that it’s primarily made up of potatoes. They’re a fantastic source of vitamin C, vitamin B6, and potassium. Furthermore, olive oil is packed with heart-healthy monounsaturated fats, while herbs such as costmary and rosemary have been linked to various health benefits including improved digestion and brain health.
Potatoes, when roasted as they are in this recipe, are also a source of resistant starch, which feeds the good bacteria in your gut. Considering the role gut health plays in everything from our immune system function to our mood, this is a dish designed to nourish you from the inside out.
Perfect Pairings
One of my favorite ways to serve these aromatic roasted potatoes is alongside a simple grilled chicken or a robustly flavored beef curry. They also work beautifully as part of a meze-inspired spread, alongside other dishes such as hummus, falafel, and grilled vegetables. No matter how you choose to serve them, I hope these Costmary and Rosemary Roasted Potatoes will become a cherished part of your family’s meal rotation, just as they are in mine.
What You’ll Need
- 2 lbs of diced potatoes
- 4 tablespoons of olive oil
- 2 teaspoons of fresh costmary leaves, finely chopped
- 2 teaspoons of fresh rosemary leaves, finely chopped
- 1-2 teaspoons of sea salt
- 1-2 teaspoons of black pepper
- 1 clove of garlic, minced
Method
Step One
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). While the oven is preheating, prepare your potatoes by washing, peeling (optional), and cutting them into equal-sized pieces.
Step Two
Arrange the diced potatoes on a large baking tray ensuring they are spread out in a single layer. This will ensure all the potatoes will roast evenly.
Step Three
In a small bowl, combine the finely chopped fresh costmary and rosemary leaves, sea salt, black pepper, and minced garlic. Mix together until well combined.
Step Four
Drizzle the olive oil over the potatoes on the baking tray. Then, sprinkle the herb and spice mixture over the potatoes, ensuring an even distribution.
Step Five
Toss the potatoes until they are all well-coated with the herb, spice, and oil mixture. Place the tray in the preheated oven.
Step Six
Roast the potatoes for about 40-45 minutes, or until they are golden brown and crisp. Halfway through the roasting time, turn the potatoes for even cooking. Monitor closely towards the end of cooking to prevent burning.
Step Seven
Once done, remove the potatoes from the oven. Allow them to cool slightly, then serve while still warm. Enjoy your homemade Costmary and Rosemary Roasted Potatoes!
