What You’ll Need

  • 3 cups of vegetable broth
  • 1 cup of heavy cream
  • 1/2 cup prepared horseradish
  • 1 tablespoon unsalted butter
  • 1 large white onion, diced
  • 2 cloves garlic, minced
  • 1 apple, peeled and diced
  • 1 pear, peeled and diced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh chopped chives (for garnish)

Method

Step One

Start by melting the butter in a large pot over medium heat. Once melted, add the diced onion and minced garlic to the pot. Cook these ingredients, stirring occasionally until the onions become a golden brown color. This may take about 5 minutes.

Step Two

After the onions and garlic are well cooked, add the diced apple and pear to the pot. Continue to cook, stirring occasionally until the fruits have softened. This process should take around 5 minutes as well.

Step Three

Once the fruits have softened, add the prepared horseradish and vegetable broth into the pot. Bring this combination to a boil, then reduce the heat to medium-low and let it simmer for about 20 minutes. This allows all the flavors to blend together.

Step Four

After the soup has been simmering for 20 minutes, use a blender or immersion blender to puree the soup until it is smooth. If using a regular blender, you might need to do this in batches.
