What You’ll Need

  • 24 ounces of potato gnocchi
  • 4 tablespoons of unsalted butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 pound of fresh mushrooms, sliced
  • 6 cups of fresh spinach
  • 2 cups of heavy cream
  • 1 1/2 cups of Parmesan cheese, grated
  • Salt and pepper to taste
  • Additional Parmesan cheese for garnish

Method

Step One

Start by cooking the gnocchi according to the directions on the package. Once cooked, drain and set aside.

Step Two

In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and finely chopped onion to the skillet. Sauté until the onions become translucent and the garlic is fragrant.

Step Three

Increase the heat to medium-high and add the sliced mushrooms to the skillet. Sauté until the mushrooms are lightly browned and tender. This usually takes about 5 minutes.

Step Four

Add the fresh spinach to the skillet and continue to cook until the spinach wilts. This will take approximately 2-3 minutes. Once the spinach is wilted, reduce the heat to medium.

Step Five

Add the heavy cream to the skillet and stir continuously until the cream begins to simmer. Once simmering, add the grated Parmesan cheese, stirring constantly until the cheese fully melts into the cream, forming a sauce.

Step Six

Add the cooked gnocchi to the skillet and stir well, ensuring each gnocchi is coated with the creamy sauce. Season with salt and pepper to taste.

Step Seven

Serve the Creamy Mushroom and Spinach Gnocchi warm. Garnish with additional Parmesan cheese to taste before serving.
