- 1 medium-sized onion, chopped

- 1 tablespoon fresh ginger, grated
- 2 pounds pumpkin, peeled and chopped
- 1 large potato, peeled and chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt, to taste
- Pepper, to taste
- 1 tablespoon pumpkin seeds, for garnish
Method
Step One
In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the chopped onion and sauté until the onions are soft and translucent.
Step Two
