What You’ll Need
- 3 lbs Russet potatoes, peeled and thinly sliced
- 2 large yellow onions, chopped
- 2 cloves of garlic, minced
- 1/4 cup unsalted butter
- 2 tbsp Creole seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup heavy cream
- 1.5 cups sharp cheddar cheese, grated
- 1 cup Parmesan cheese, grated
- 1/4 cup bread crumbs
- 2 tbsp fresh parsley, chopped
Method
Step One
Preheat your oven to 375 degrees F (190 degrees C). While the oven is preheating, you can prepare your potatoes by peeling and slicing them thinly. Set them aside for now.
Step Two
In a large skillet, melt the unsalted butter over medium heat. Once the butter is fully melted, add the chopped yellow onions and minced garlic to the skillet. Cook these until they are soft and fragrant, stirring frequently. This should take approximately five to seven minutes.
Step Three
Add in the Creole seasoning, salt, and black pepper to the onion and garlic mixture. Mix this until the onions and garlic are well-coated with the spices. Then, pour in the heavy cream and stir to combine.
Step Four
In a large mixing bowl, combine the sliced potatoes with the onion and cream mixture. Ensure each slice is well-coated.
Step Five
Spread half of the coated potato slices evenly into a baking dish. Sprinkle half of the sharp cheddar cheese and half of the Parmesan cheese over the top of the potato slices.
Step Six
Layer the rest of the potato slices on top of the cheese and pour any remaining cream mixture over the top. Apply the remaining cheddar and Parmesan cheese, ensuring it covers the entire dish.
Step Seven
Sprinkle the bread crumbs evenly over the top of the cheese layer. This will help to create a nice, crispy top layer to the gratin.
Step Eight
Bake in your preheated oven for about 60 minutes, or until the potatoes are tender when pierced with a fork and the top is golden and bubbly.
Step Nine
Once done, remove from the oven and allow it to cool for about 10 minutes before garnishing with the chopped fresh parsley. Now, your Creole Onion and Potato Gratin is ready to be served. Enjoy!
