What You’ll Need

  • 2 sticks unsalted butter
  • 1 cup curry leaves
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric powder
  • 2 cloves garlic
  • 1 small piece of ginger
  • 2 fresh green chilies

Method

Step One

Begin by placing the 2 sticks of unsalted butter in a bowl to allow it to soften at room temperature. This step is important because soft butter will blend more easily with the other ingredients.

Step Two

While the butter is softening, wash the 1 cup curry leaves, 2 fresh green chilies and small piece of ginger properly. Peel and finely chop both the garlic and the ginger. Slit the chilies. Set these aside.

Step Three

In a small pan on medium heat, add the curry leaves, chopped garlic and ginger, and chilies. Sauté these until fragrant, usually for about a minute.

Step Four

Take the pan off the heat and allow it to cool down. Once cooled, transfer the ingredients to a blender or food processor. Add the 1 tablespoon of lemon juice and 1 teaspoon of turmeric powder. Blend until you get a smooth paste.

Step Five

Combine the curry leaf paste with the softened butter in a bowl. Add the 1 teaspoon of salt and mix well.

Step Six
