What You’ll Need

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, chilled and cut into cubes
  • 1 cup cheddar cheese, shredded
  • 1/3 cup fresh curry leaves, finely chopped
  • 2/3 cup milk

Method

Step One

Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Then, lightly flour a baking sheet and set it aside.

Step Two

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Stir these dry ingredients until they are well mixed.

Step Three

Add your chilled, cubed butter to the flour mixture. Using a pastry cutter, or your hands, work the butter into the flour until the mixture resembles coarse crumbs.

Step Four

To the same bowl, add the shredded cheddar cheese and finely chopped curry leaves. Mix these elements in until they are evenly distributed throughout the dry mixture.

Step Five

Pour your milk into the bowl. Using a spoon or clean hands, mix until a dough begins to form. Be careful not to overwork the dough, as this will make your biscuits tough. If the dough is too dry, add a bit more milk.

Step Six

Turn the dough out onto a floured surface. Pat the dough into a rectangle that’s about 1 inch thick. Using a round biscuit cutter, cut out your biscuits and place them on your prepared baking sheet. You should get around 12 biscuits.

Step Seven

Bake your biscuits in your preheated oven for about 15 minutes, or until they’ve risen and turned a lovely golden brown. Once done, remove them from the oven and let them cool slightly before serving. Enjoy these Curry Leaf Cheddar Biscuits warm, with a pat of butter or some good jam.
