What You’ll Need
- 2 cups of fresh Cyperus Articulatus (also known as Papyrus)
- 3 cups of natural honey
- 2 cups of mixed fruits (apple, pineapple, grapes, and strawberries)
- 2 tablespoons of lemon juice
- 1 tablespoon of grated orange zest
- 6 mint leaves for garnish
Method
Step One
Start by thoroughly washing the Cyperus Articulatus (Papyrus) and mixed fruits. Once cleaned, roughly chop the Papyrus and fruits. This will make it easier to extract their juices.
Step Two
In a large saucepan, add the chopped Papyrus and mixed fruits. Add in the honey, lemon juice, and grated orange zest. Stir everything together until well combined.
Step Three
Place the saucepan on a stove over medium heat. Let the mixture slowly simmer until it comes to a boil. Once boiling, reduce the heat to low and allow it to simmer for around 40-60 minutes. Stir the mixture occasionally to ensure that it doesn’t stick to the pan or burn.
Step Four
After about an hour, the mixture should have thickened into a syrup-like consistency and the colours will have deepened. At this point, turn off the heat and allow the mixture to cool slightly.
Step Five
Once cooled, strain the mixture over a large bowl to separate the solids from the liquids. Press the fruits and Papyrus against the strainer to extract as much juice as possible.
Step Six
Transfer the strained honey into sterilized glass jars. Allow the honey to cool completely before sealing the jars with lids.
Step Seven
