What You’ll Need

  • 12 pieces of Rice Paddy Fish (about 3 lbs total)
  • 4 stalks Lemongrass, finely chopped
  • 4 cloves Garlic, finely minced
  • 2 tablespoons Sugar
  • 2 tablespoons Fish Sauce
  • 1 tablespoon Oyster Sauce
  • 1 tablespoon Soy Sauce
  • 2 teaspoons Ground Black Pepper
  • 1 teaspoon Turmeric Powder
  • 1 tablespoon Vegetable Oil, for marinating
  • Additional Vegetable Oil, for grilling
  • 1 bundle Fresh Dill
  • 1 bundle Cilantro
  • 1 bundle Vietnamese Mint
  • 1 Lime, cut into wedges

Method

Step One

Start by cleaning the Rice Paddy Fish thoroughly, ensure to remove all the scales and innards. Pat them dry and set aside.

Step Two

In a large bowl, incorporate finely chopped Lemongrass, minced Garlic, Sugar, Fish Sauce, Oyster Sauce, Soy Sauce, Ground Black Pepper, Turmeric Powder, and 1 tablespoon of Vegetable Oil. Mix well to combine all the ingredients and create a marinade.

Step Three

Add the clean, dry Rice Paddy Fish into the marinade making sure each piece is well coated. Let it marinate for at least 1-2 hours in the refrigerator to allow the flavors to infuse.

Step Four

After the fish has marinated, preheat your grill on medium-high heat and coat the grates with a little Vegetable Oil to prevent the fish from sticking.

Step Five
