What You’ll Need

  • 2 pounds fresh green beans, trimmed
  • 3 cups water
  • 1 cup white vinegar
  • 1/4 cup canning salt
  • 1 tablespoon sugar
  • 1 teaspoon crushed red pepper flakes
  • 3 cloves garlic, minced
  • 6 sprigs fresh dill

Method

Step One

Rinse the fresh green beans thoroughly under cold water and trim off the ends.

Step Two

In a large pot, bring 3 cups of water to a boil. Add the green beans and blanch them for about 3 minutes. Remove the green beans and immediately place them in a bowl of ice water to halt the cooking process. Drain the beans once they are cool.

Step Three

In a medium saucepan, combine the white vinegar, canning salt, sugar, and crushed red pepper flakes. Bring the mixture to a boil, stirring until the salt and sugar are fully dissolved.

Step Four

Process the jars in a boiling water bath for 10 minutes to seal. Remove the jars from the water bath and let them cool on a kitchen towel. Check the seals after 24 hours. Store in a cool, dark place for at least two weeks before consuming to allow the flavors to develop.
