What You’ll Need

  • 1 cup extra virgin olive oil
  • 1 tablespoon Dorrigo pepper berries
  • 2 cloves of garlic, peeled
  • 1 strip of orange zest
  • 1 sprig of fresh rosemary
  • 1 sprig of fresh thyme

Method

Step One

Place the Dorrigo pepper berries, peeled garlic cloves, strip of orange zest, and the sprigs of fresh rosemary and thyme into a sterilized glass jar.

Step Two

Heat the olive oil in a saucepan over medium heat until it reaches a temperature of 180 degrees Fahrenheit. Be sure to monitor the heat closely as you don’t want the oil to reach its smoke point, which is usually around 210 degrees Fahrenheit for extra virgin olive oil.

Step Three

Carefully pour the heated olive oil into the glass jar, making sure to cover the ingredients fully. Close the lid of the jar tightly and shake well to mix all the ingredients.

Step Four

Allow the jar to cool to room temperature. Once cooled, place the jar in a dark, cool place and let it sit undisturbed for about two weeks. This allows the flavors to infuse thoroughly.

Step Five

After two weeks, strain the oil through a fine mesh sieve or cheesecloth and pour it into a clean sterilized glass bottle. Your Dorrigo Pepper Infused Olive Oil is now ready to be used for bread dipping. It will keep for up to 3 months, stored in a cool, dark place.
