Health Benefits Packed in Pleasure

Being a California native, the consciousness of how pivotal a role food plays in our wellness is ingrained in me. While I adore dishes that are a salve to the soul, it’s important for that comfort food to do our bodies some good too. As delectable as the Durian and Mango Salad is, it’s silently a powerhouse of vitamins and minerals. With Mangoes, a rich source of Vitamins A and C, coupled with Durian’s high content of Potassium and Folic Acid, every serving is a delightful way of keeping our bodies enriched and empowered.

A Versatility to Adore

Another aspect that had me smitten with this vibrant salad is its versatility. It pairs beautifully well with chicken satay, lending its unique blend of fruity freshness to the earthiness of the grilled meat. Taking inspiration from Southeast-Asian cuisine, it also serves as an excellent side to hearty noodle dishes, cutting through their richness with a welcomed fruity kick. Furthermore, the recipe can be easily modified to account for any dietary preferences or allergies, making it a delightful addition to any festive or daily spread.

What You’ll Need

  • 2 cups durian fruit, seeded and cut into chunks
  • 1.5 cups ripe mango, peeled and cubed
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • Salt and black pepper to taste
  • 1 head lettuce, washed and torn into bite-size pieces
  • 1/2 cup crushed peanuts for garnish
ALLERGENS: Durian, mango, peanuts

Method

Step One

Begin with preparing the fruits. Seed and cut the durian into chunks, and peel and cube your ripe mango. Ensure that your measurements are roughly 2 cups of durian and 1.5 cups of mango.

Step Two

Chop your red bell pepper and red onion, with measurements coming to about 1 cup and 1/2 cup respectively. Do the same with the fresh cilantro, which should amount to about 1/4 cup once chopped.

Step Three

In a large bowl, combine all of your cut and chopped ingredients. This will include the durian chunks, mango cubes, chopped red bell pepper, chopped red onion, and chopped cilantro.

Step Four

Drizzle the fresh lime juice, salt and black pepper to taste over your combined fruits and vegetables. Toss the salad gently to mix all the components, and to ensure that the lime juice, salt, and pepper is evenly distributed.

Step Five

Prepare the lettuce by washing and tearing it into bite-sized pieces. Once ready, add the lettuce into your salad mixture. Toss gently again to combine.

Step Six

Finally, serve your Durian and Mango salad in individual bowls or a large salad dish. Garnish with crushed peanuts and serve immediately for the most refreshing result.
