What You’ll Need

  • 1 cup graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/4 cups durian flesh (the edible part)
  • 2 (8 ounce) packages of cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

Method

Step One

Preheat your oven to 325 degrees F. In a bowl, combine 1 cup of graham cracker crumbs, 5 tablespoons of melted unsalted butter, and 1/4 cup of granulated sugar until fully mixed. Press the resulting crumb mixture into the bottom of a 9-inch springform pan. Bake this crust in the preheated oven for about 10 minutes, or until it’s lightly browned. Remove the crust from the oven and let it cool.

Step Two

Take 1 1/4 cups of durian flesh and puree it in a blender or food processor until it’s smooth. Set this aside for now.

Step Three

In another bowl, beat together the 2 (8 ounce) packages of softened cream cheese and 1/2 cup of granulated sugar until the mixture is very smooth. Add in 1/2 cup of sour cream and continue to beat until it’s fully incorporated.

Pour the cheese mixture over the cooled crust in the springform pan. Tap the pan lightly on the countertop to get rid of any air bubbles. Bake the cheesecake in the preheated oven for about 50 minutes to an hour, or until the center of the cheesecake is set and the top is lightly browned.

Step Six
