What You’ll Need

  • 1 1/2 cups of water
  • 1/2 cup of unsalted butter
  • 1/2 teaspoon of salt
  • 1 1/2 cups of all-purpose flour
  • 6 large eggs
  • 1 cup of heavy cream
  • 2 tablespoons of granulated sugar
  • 1 teaspoon of vanilla extract
  • 2 cups of durian flesh, seeds removed
  • Powdered sugar, for dusting
ALLERGENS: unsalted butter, all-purpose flour, eggs, heavy cream

Method

Step One

Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.

Step Two

In a large saucepan, boil water, butter, and salt together. Once the mixture comes to a boil, remove from heat and quickly stir in the all-purpose flour until the mixture forms a ball.

Step Three

Transfer the dough to a large mixing bowl and cool for about 5 minutes. Then beat in the eggs, one at a time, until you have a smooth, glossy dough.

Step Four

Transfer the dough to a piping bag and pipe 1-inch rounds onto the lined baking sheet. Bake in the preheated oven for about 20 minutes or until golden brown. Allow to cool completely on a wire rack.

Step Five

Whilst the puffs are cooling, prepare the durian cream filling. Whip the heavy cream, granulated sugar, and vanilla extract together until stiff peaks form. Fold in the durian flesh until it’s fully incorporated.

Step Six

Once the cream puffs are fully cooled, slice them open and spoon in the durian cream filling. Alternatively, you can use a piping bag to inject the filling into the puffs.
