What You’ll Need

  • 6 large eggs
  • 1/3 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1/4 cup of finely chopped celery
  • 1/4 cup of finely chopped red onion
  • 2 tablespoons of capers, drained and roughly chopped
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of kosher salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of chopped fresh dill
  • 2 tablespoons of chopped fresh parsley
ALLERGENS: Eggs, mayonnaise (eggs, mustard), Dijon mustard

Method

Step One

Place the eggs in a single layer in a saucepan and cover with enough water that there’s 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, reduce the heat to low, and cook for 1 minute. Remove the saucepan from heat and leave covered for 14 minutes. After the 14 minutes, rinse under cold water continuously for 1 minute.

Step Two

Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a large bowl, and placing the whites on a plate. Mash the yolks into a fine crumble using a fork.

Step Three

Add mayonnaise, Dijon mustard, celery, onion, capers, lemon juice, salt, and pepper to the yolks. Stir everything together until well combined.

Step Four

Using a spoon, fill each egg white half with the yolk mixture. It should be about a tablespoon per egg white half.

Step Five

Sprinkle with fresh dill and parsley. You can serve them immediately or store them in the fridge until you’re ready to serve.
