What You’ll Need
- 1 quart of heavy cream
- 1/2 cup of sugar
- 1 vanilla bean, split lengthwise
- 2 tablespoons of powdered gelatin

- 2 cups of mixed fresh berries (for serving)

Method
Step One
Begin by soaking the gelatin in the cold water until it softens. This usually takes about 5 minutes. Set this aside to use later.
Step Two
In a large saucepan over medium heat, combine the heavy cream and sugar. Stir this until the sugar is completely dissolved, which should take around 5 to 7 minutes.
Step Three
Add the split vanilla bean to the saucepan, making sure to scrape out the seeds and include them in the mixture. Stir the mixture until fully combined.
Step Four
Add in the elderflower heads and elderflower cordial. Stir continuously for about 10 minutes in order to infuse the cream with the flavors.

Remove the saucepan from the heat and discard the elderflower heads. Then, add the soaked gelatin in and stir until it is completely dissolved into the mixture.
Step Six
Divide the mixture evenly into six serving dishes. Place these in the refrigerator to set, which should take approximately four hours (or can be left overnight for best results).
Step Seven
When you are ready to serve, top each panna cotta with a generous serving of fresh berries. Garnish with mint leaves for presentation, and serve chilled.
