What You’ll Need
- 20 Elderflower heads
- 3 cups of granulated sugar
- 2 cups of water
- 1 lemon, zested and sliced
- 1 orange, zested and sliced
- 2 tablespoons of citric acid
Method
Step One
Pick the elderflower heads, making sure they’re clean and free from any insects. Shake off any excess dust or debris but do not wash them.
Step Two
In a large saucepan, combine the sugar and water. Stir it over a low heat until the sugar has completely dissolved.
Step Three
Once the sugar is dissolved, bring the mixture to a boil and then turn off the heat.
Step Four
Add the elderflower heads into the mixture in the saucepan. Add the slices of lemon and orange as well, making sure that all the pieces are submerged in the syrup.
Step Five
Stir in the citric acid and then cover the saucepan. Leave the mixture to infuse for at least 24 hours.
Step Six
After 24 hours, strain the mixture through a fine sieve or a piece of muslin cloth, catching the liquid in a large bowl underneath.
Step Seven
Dispose of the used elderflower heads and citrus pieces. Pour the strained liquid back into a clean saucepan.
Step Eight
Heat the liquid over a low heat until it is hot but not boiling. Then, pour it into sterilized bottles or jars.
Step Nine
