What You’ll Need
- 3 cups elderflower cordial
- 2 cups apple juice
- 2 cups white grape juice
- 3 tablespoons lemon juice
- 4 envelopes unflavored gelatin
- 3/4 cup granulated sugar
- Fresh fruits for decoration (e.g. strawberries, blueberries, kiwi etc.)
Method
Step One
Begin by combining the elderflower cordial, apple juice, white grape juice, and lemon juice in a large pot. Stir well to combine.
Step Two
In a separate bowl, sprinkle the unflavored gelatin over 1/2 cup of the juice mixture. Allow it to sit for about 5 minutes, or until the gelatin is softened.
Step Three
While the gelatin is softening, heat the juice mixture over medium heat until it’s hot, but not boiling. Once heated, add the granulated sugar and stir until it’s fully dissolved.
Step Four
Add the softened gelatin to the hot juice mixture and stir until the gelatin is fully dissolved. You should not see any grains of gelatin.
Step Five
Remove the pot from heat and allow it to cool for about 20 minutes.
Step Six
Once the mixture has cooled slightly, pour it into individual serving bowls or a large gelatin mold. Place the bowls or mold in the refrigerator and chill for at least 4 hours, or until the jelly is set.
Step Seven
When you’re ready to serve the jelly, decorate the top with fresh fruits of your choice. Enjoy!
